Granny's Bakery on Celina's Historic Downtown Square has replaced its self-serve coffee station with a full pastry-themed coffee bar, giving shoppers on West Pecan Street a reason to linger longer.
Owner Mikala Everson told Community Impact the new bar features bakery-inspired flavors on a permanent menu: banana bread, birthday cake, cinnamon roll, and cookie butter. The summer 2026 seasonal offering is a lemon pound cake latte.
Every drink can be ordered hot, cold, or "frosted," Everson's term for a frozen coffee.
Prosper High grad turned pastry chef
Everson, a Prosper High School graduate, earned an associate's degree in Baking and Pastry Arts and a bachelor's in business administration with a minor in entrepreneurship from the Culinary Institute of America. Before returning to North Texas, she worked in Google's pastry kitchen in California and served as pastry chef on National Geographic Cruise Lines.
She named the bakery after her grandmother, who taught her to bake and encouraged her to pursue it professionally. Her grandmother died during Everson's sophomore year of high school.
"I made it my life's mission to open this bakery and teach everyone what granny taught me," Everson wrote in a 2022 CelinaRadio profile.
Granny's Bakery opened its brick-and-mortar location at 401 W. Pecan St. in 2023. The shop is open seven days a week, 8 a.m. to 8 p.m.
Growing downtown square
The coffee bar expansion arrives as Celina continues investing in its downtown core. The city recently committed $131 million to replace every downtown street with concrete, and the council is pursuing an enhanced-square project that would convert North Ohio Drive into a pedestrian-friendly space.
The square is filling up. Granny's Bakery is one of more than a dozen independent shops alongside businesses like Annie Jack, Hey Sugar, Lucy's on the Square, and Valley Vines, according to the Celina EDC's Shop Celina Passport program.
The next Celina Friday Night Market on the downtown square is scheduled for Friday, Aug. 7, from 6 to 9 p.m.
